This cold soup hails from 7th century Spain \u2013 and the riper the tomatoes, the better!&nbsp;<\/p>\n\n\n\n<p><strong>MAKES 2 servings&nbsp;<\/strong><\/p>\n\n\n\n<div class=\"wp-block-buttons is-layout-flex wp-block-buttons-is-layout-flex\">\n<div class=\"wp-block-button\"><a class=\"wp-block-button__link wp-element-button\" href=\"https:\/\/www.bluekcblog.com\/wp-content\/uploads\/2021\/06\/Chef_Kyle_Summer_Gazpacho_Recipe.pdf\" target=\"_blank\" rel=\"noreferrer noopener\">Download Recipe<\/a><\/div>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>INGREDIENTS&nbsp;<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 large vine-ripened tomatoes, cored, cubed and very ripe&nbsp;<\/li>\n\n\n\n<li>1 cup cucumber, peeled and sliced &nbsp;<\/li>\n\n\n\n<li>1 garlic clove&nbsp;<\/li>\n\n\n\n<li>2 tablespoons red onion, peeled and sliced&nbsp;<\/li>\n\n\n\n<li>1 cup red bell pepper, seeded, cored and sliced &nbsp;<\/li>\n\n\n\n<li>2 tablespoons red wine vinegar &nbsp;<\/li>\n\n\n\n<li>4 tablespoons extra virgin olive oil&nbsp;<\/li>\n\n\n\n<li>2 teaspoons jalapeno, seeded and cored&nbsp;<\/li>\n\n\n\n<li>Salt and pepper, to taste&nbsp;<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>DIRECTIONS&nbsp;<\/strong><\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Place all ingredients except garnishes in a blender, then puree on high until smooth. &nbsp;<\/li>\n\n\n\n<li>Pour into serving bowls.&nbsp;<\/li>\n\n\n\n<li>Garnish and enjoy! &nbsp;<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>GARNISH&nbsp;<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Cherry tomatoes, sliced&nbsp;<\/li>\n\n\n\n<li>Cilantro leaves&nbsp;<\/li>\n\n\n\n<li>Avocado slices&nbsp;<\/li>\n\n\n\n<li>Lime wedges&nbsp;<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>CHEF NOTES&nbsp;<\/strong><\/h2>\n\n\n\n<p>For an added kick, add some extra diced jalapenos.
