A sure-fire smash hit.&nbsp;<\/p>\n\n\n\n<p><strong>MAKES 2 Servings<\/strong><\/p>\n\n\n\n<div class=\"wp-block-buttons is-layout-flex wp-block-buttons-is-layout-flex\">\n<div class=\"wp-block-button\"><a class=\"wp-block-button__link wp-element-button\" href=\"https:\/\/www.bluekcblog.com\/wp-content\/uploads\/2021\/09\/Chef_Kyle_Gr-Maple_Salmon_Butternut_Squash_Recipe.pdf\" target=\"_blank\" rel=\"noreferrer noopener\">Download Recipe<\/a><\/div>\n<\/div>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>INGREDIENTS<\/strong><\/h4>\n\n\n\n<p>FOR THE SALMON&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 wild salmon filets, 4 ounces, skin on&nbsp; &nbsp;<\/li>\n\n\n\n<li>8 tablespoons maple syrup&nbsp;<\/li>\n\n\n\n<li>Oil spray, as needed&nbsp;<\/li>\n\n\n\n<li>Salt and pepper, to taste&nbsp;<\/li>\n<\/ul>\n\n\n\n<p>FOR THE BUTTERNUT SQUASH&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 butternut squash, cut in half and de-seeded &nbsp;<\/li>\n\n\n\n<li>1 tablespoon olive oil&nbsp;<\/li>\n\n\n\n<li>1 teaspoon cinnamon&nbsp;<\/li>\n\n\n\n<li>1 tablespoon maple syrup&nbsp;<\/li>\n\n\n\n<li>2 tablespoons sage&nbsp; &nbsp;<\/li>\n\n\n\n<li>2 tablespoons butter&nbsp;<\/li>\n\n\n\n<li>Salt and pepper, to taste<br><\/li>\n<\/ul>\n\n\n\n<p>FOR THE BRUSSELS SPROUTS&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 cups brussels sprouts, cut into quarters<\/li>\n\n\n\n<li>\u00bd cup mushrooms, sliced<\/li>\n\n\n\n<li>2 teaspoons garlic, minced<\/li>\n\n\n\n<li>2 teaspoons olive oil&nbsp;<\/li>\n\n\n\n<li>2 tablespoons dry white wine<\/li>\n\n\n\n<li>2 tablespoons water&nbsp;<\/li>\n\n\n\n<li>Salt and pepper, to taste&nbsp;<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>DIRECTIONS<\/strong><\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Pre-heat charcoal or gas grill. Preheat oven to 375 degrees F. &nbsp;<\/li>\n\n\n\n<li>Season butternut squash with oil, salt, and pepper. Place on parchment-lined baking sheet cut side down, then bake until soft and tender. &nbsp;<\/li>\n\n\n\n<li>In a large saut\u00e9 pan on high heat, add oil, and saut\u00e9 sprouts for 5 minutes.&nbsp;<\/li>\n\n\n\n<li>Add mushrooms and garlic to pan, and saut\u00e9 for 4 minutes. Deglaze pan with wine and water. &nbsp;<\/li>\n\n\n\n<li>Season to taste and set aside.&nbsp;<\/li>\n\n\n\n<li>To finish smashed butternut squash, remove the edible meat of the squash. Put in a bowl, smash well, then mix in the rest of the ingredients. Discard skin. Season to taste and reserve warm on the side.&nbsp;<\/li>\n\n\n\n<li>Season salmon with oil spray, salt, and pepper. Place on grill skin side down, then close lid. &nbsp;<\/li>\n\n\n\n<li>As it\u2019s grilling, brush salmon with maple syrup 4 times.&nbsp;<\/li>\n\n\n\n<li>Once salmon is done, remove from grill.&nbsp;<\/li>\n\n\n\n<li>Plating: Place the butternut-brussels sprouts smash on plate, then top with a salmon filet. Garnish as desired.&nbsp;<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>GARNISH<\/strong><\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Toasted almonds<\/li>\n\n\n\n<li>Maple syrup drizzle<\/li>\n\n\n\n<li>Fried sage leaves&nbsp; &nbsp;<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>CHEF NOTES<\/strong><\/h4>\n\n\n\n<p>Have extra apples hanging around?
