It&#8217;s soup season and what better way to kick it off than with a hearty bowl of stuffed pepper soup. It transforms a dinnertime favorite into a bowl of soup, with bell peppers and lean ground beef in a rich tomato base topped with brown rice.\u00a0<\/p>\n\n\n\n<p><strong>What you&#8217;ll need:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>3 cups of cooked brown rice&nbsp;<\/li>\n\n\n\n<li>1 lb 95% lean ground beef&nbsp;<\/li>\n\n\n\n<li>\u00bd cup chopped green bell pepper&nbsp;<\/li>\n\n\n\n<li>\u00bd cup chopped red bell pepper&nbsp;<\/li>\n\n\n\n<li>1 cup finely dice onion&nbsp;<\/li>\n\n\n\n<li>3 cloves garlic, chopped&nbsp;<\/li>\n\n\n\n<li>2 14.5 oz cans petite diced tomatoes&nbsp;&nbsp;<\/li>\n\n\n\n<li>1 \u00be cups tomato sauce&nbsp;<\/li>\n\n\n\n<li>2 cups reduced sodium, fat-free chicken broth&nbsp;<\/li>\n\n\n\n<li>\u00bd tsp dried marjoram&nbsp;&nbsp;<\/li>\n\n\n\n<li>Salt and pepper to taste&nbsp;&nbsp;<\/li>\n<\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li>In a large pot or dutch oven, brown ground meat on high heat and season with salt.&nbsp;<\/li>\n<\/ol>\n\n\n\n<ol start=\"2\" class=\"wp-block-list\">\n<li>Drain fat if any, reduce heat to medium-low, then add peppers, onions and garlic.&nbsp;<\/li>\n<\/ol>\n\n\n\n<ol start=\"3\" class=\"wp-block-list\">\n<li>Cook about 5 minutes on low heat.&nbsp;<\/li>\n<\/ol>\n\n\n\n<ol start=\"4\" class=\"wp-block-list\">\n<li>Add tomatoes, tomato sauce, chicken broth, marjoram and season with salt and pepper to taste. Cover and simmer on low heat for 30 minutes.&nbsp;<\/li>\n<\/ol>\n\n\n\n<ol start=\"5\" class=\"wp-block-list\">\n<li>Serve about 1 1\/2 cups of soup in each bowl and top with 1\/2 cup cooked brown
