Sardinia Herb Soup

Sardinia Herb Soup

Ingredients:
- 1/2 lb. turkey Italian sausage, casings removed
- 2 tbsp extra virgin olive oil
- 1 medium yellow onion
- 2 medium carrots
- 2 medium celery stalks
- 1 large fennel bulb
- 1 tsp oregano
- 1 tsp red pepper flakes
- 2 cloves garlic, minced
- 4-6 cups leafy greens such as Tuscan kale or green cabbage
- 1 bunch flat-leaf parsley
- 8 cups vegetable or chicken broth
- 15 oz can white beans
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions:
- Remove casings from turkey Italian sausage, crumble, and cook in a large pot or Dutch oven.
- Remove sausage from pot and set aside.
- Dice onion, carrots, celery, and fennel. Roughly chop leafy greens and parsley.
- Using same pot, heat olive oil over medium heat, add onion, carrots, celery, fennel, oregano, red pepper flakes, salt and pepper.
- Sauté 10 minutes or until soft and fragrant.
- Add garlic and sauté until fragrant, about a minute.
- Add parsley, leafy greens, beans, and broth.
- Bring to a boil. Lower heat and simmer for 30-45 minutes (with lid on).
- Grate cheese on top and serve with fresh sourdough.
