Tuna Stuffed Avocado

Avocado stands in for mayo in this flavorful southwest combo that marries tuna, bell peppers, jalapeno, lime juice, and cilantro. Add other fresh veggies – green onion, radish, celery – and cannellini beans to make it a heartier meal.

Ingredients

  • 1 avocado halved and pitted
  • 1 5 ounce can solid white albacore tuna
  • ¼ cup diced red bell pepper
  • 1 tablespoon minced jalapeno
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Scoop out a small portion of avocado from the center of each half to enlarge the cavity. Transfer the removed avocado to a medium mixing bowl and mash with a fork until mostly smooth.
  2. Drain and add tuna, diced red bell pepper, minced jalapeno, and chopped cilantro to the bowl. Drizzle with lime juice. Stir until well combined.
  3. Divide the tuna mixture evenly between the avocado halves, spooning it into the hollowed centers. Season with salt and pepper to taste. Serve immediately.
