Tuna Stuffed Avocado
Avocado stands in for mayo in this flavorful southwest combo that marries tuna, bell peppers, jalapeno, lime juice, and cilantro. Add other fresh veggies – green onion, radish, celery – and cannellini beans to make it a heartier meal.
Ingredients
- 1 avocado halved and pitted
- 1 5 ounce can solid white albacore tuna
- ¼ cup diced red bell pepper
- 1 tablespoon minced jalapeno
- 1/4 cup chopped fresh cilantro
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Scoop out a small portion of avocado from the center of each half to enlarge the cavity. Transfer the removed avocado to a medium mixing bowl and mash with a fork until mostly smooth.
- Drain and add tuna, diced red bell pepper, minced jalapeno, and chopped cilantro to the bowl. Drizzle with lime juice. Stir until well combined.
- Divide the tuna mixture evenly between the avocado halves, spooning it into the hollowed centers. Season with salt and pepper to taste. Serve immediately.
